Pumpkin Pie with Pecan Strudel
Is it a cheesecake or is it a pie? I like to think it is the best of both worlds—the creaminess of the cheese cake (but not too rich), and the moist healthful pumpkin pie. The orange gives it a citrus lift.
For Crust:
1-1/2 package graham crackers, crushed (or ginger snaps)
4 tablespoons melted butter
1 tablespoon brown sugar
½ teaspoon ginger
Mix with fork until all ingredients are moistened. Spread evenly in a buttered 9-inch glass pie pan and pack lightly. Bake in a 350 degree oven for 10 minutes.
1 can or 2 cups freshly mashed pumpkin
8 ounces cream cheese (for more of a cheesecake flavor, use 2 packages cream cheese and 8 ounces of pumpkin)
1 teaspoon vanilla
¼ cup orange marmalade (or 2 tablespoons each orange juice and grated orange rind)
1 can sweetened condensed milk
2 teaspoons cinnamon
½ teaspoon nutmeg
¼ teaspoon each ginger and allspice
1/8 teaspoon cloves
½ teaspoon salt
3 eggs
Strudel Topping:
1 cup rolled oats
¾ cup pecans
1 tablespoon melted butter
2 tablespoons dark brown sugar
½ teaspoon cinnamon
1. Start with all ingredients at room temperature. Mix ingredients for filling in mixer, eggs last.
2. Pour into crust. Bake at 325 degrees for 30 minutes. Take out and spoon strudel topping around the edge. Bake for another 20 minutes. Turn oven off, open door slightly and leave in oven for 1 hour. Serve at room temperature or chilled.
